- Peeled Bottle gourd about 250gms
- 2 medium sized tomatoes around 100 gms
- 1 Big Peeled Potato about 50-80 gms
- Chopped/grated ginger 1 tablespoon
- 1-2 bay leaves
- Butter 2 tablespoons
- Cummin seeds/ powder 1/4 teaspoon
- A pinch of afesodetia
- 500 ml water
- Salt as per taste
It’s been quiet a week with a festival falling on the Saturday that passed by. Initially the baby was ill and post Sunday now I’m sick and it is just no fun at all being ill.
I just realized that everyone suggests to have chicken soup when you have a flu/cold but what do hardcore vegetarians do. Well here is recipe just for that a 100% pure Vegetarian soup from my Mothers stock of recipes.
The list of ingredients are as follows:
Cut all the vegetables in small pieces and combine them in a pressure cooker or boiling pan with ginger, bay leaves, salt and the 500 ml water and cook until the vegetables are soft and cooked evenly.
At this point the tomatoes peels which have loosened up are removed with a spoon and the vegetables along with little of the vegetable stock are blended into a smooth consistency. Also, do note do not blend the bay leaves and just discard them from the stock.
Remove, the blended purée into another pan along with the stock. Take a new pan and heat it up till the butter begins to melt. Add the cummin seeds/powder and as it starts to sizzle and change colour add the afesodetia. As this just needs 5 seconds in the butter, add in the blended purée along with the left over stock and stir it all together till you have silken broth. In case the soup is too thick add in water till you get the consistency you want.
Serve hot with grated cheese (optional) and buttered toast. I love to have this with toast and it is a great way to have vegetable intake even if you don’t make this when you are ill. Why this is great for flu/cold is because ginger is natural curative against cold and sore throats, plus your veggies in soup is great as it flushes out toxins from your body.
In case you can’t find bottle gourd, don’t fret simply use tomatoes and potatoes and you can substitute bottle gourd with carrots. Also if you don’t have afesodetia you can skip that and just go with the cummin.
And there you have it a delicious healthy vegetable soup a vegetarian alternate to the chicken soup.
